中国烹饪艺术博大精深、源远流长。随着中外交流不断加强,饮食文化方面的交流也显得格外注目。作为饮食文化的承载者,中国菜名文化广博、深远、悦耳动听、富含浓厚的历史文化底蕴和地方特色。因此中华美食菜单名的翻译在中国烹饪艺术的对外交流中起着不容忽视的作用。本文通过归化与异化的定义,描述了翻译的归化与异化,并对归化与异化进行了讨论,从中试析中式菜名英译的归化与异化现象,以及中式菜名构成的特点,并以实例说明了中式菜名英译中的归化、异化现象。归化异化需要同时使用,相互促进,而只用一种翻译方法并不能涵盖像中式菜名翻译如此复杂的翻译领域。同时异化也需要归化的帮助与合作,归化亦需辅以异化,这也是实现跨文化交流效果最大化的客观要求。希望通过本文的分析能够帮助译者更好地更加规范地翻译中文菜名。

Abstract
Chinese cuisine is broad and profound and has a long history. With the continuous increasing of exchanges between China and foreign countries, the dietary culture is also particularly noticeable. As a carrier of dietary culture, Chinese dish name culture has a wide and far-reaching influence, which is pleasing to the hear and rich in historical and cultural heritage and local characteristics. Therefore, the translation of the Chinese dish names plays an important role in the foreign exchange of Chinese culinary arts. This paper describes the domestication and foreignization of translation through the definition of domestication and foreignization and discusses them.  Domestication and foreignization need to be used at the same time and promote each other. However, using only one translation method can not cover such complex translations as Chinese dish names. Simultaneous foreignization also requires the help and cooperation of naturalization, and domestication also needs to be supplemented by foreignization, which is also the objective requirement for maximizing the effect of cross-cultural exchange. It is hoped that the analysis in this article can help translators to translate Chinese names better and more standardized.
